Ingredients

  • 4 large sweet onions (Vidalia or Walla Walla)
  • 4 tablespoons unsalted butter
  • 2 teaspoons fresh thyme
  • 1 teaspoon coarse salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the onions, cutting off the root end and the top. Slice a small, flat section off the bottom of each onion so they sit upright without wobbling.

Step 3

Using a paring knife, carefully core out a small well in the center of each onion to make room for the butter and seasonings.

Step 4

Place the onions in a deep baking dish just large enough to hold them securely.

Step 5

Insert 1 tablespoon of unsalted butter into the cored center of each onion.

Step 6

Sprinkle the fresh thyme, coarse salt, and freshly ground black pepper evenly over the onions.

Step 7

Drizzle 1 tablespoon of olive oil over the onions to help them caramelize during baking.

Step 8

Cover the baking dish tightly with aluminum foil to trap steam and cook for 40 minutes.

Step 9

Remove the foil and baste the onions with the liquid from the bottom of the dish. Return the uncovered baking dish to the oven and bake for an additional 20 minutes, or until the onions are tender and golden brown.

Step 10

Remove the onions from the oven and allow them to rest for 5 minutes. Drizzle each onion with balsamic glaze for an added touch of sweetness.

Step 11

Garnish with freshly chopped parsley, if desired, and serve warm as an elegant side dish.
