  • 4 cloves Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 3 tablespoons All-purpose flour
  • 1 cup Dry white wine
  • 5 cups Seafood stock
  • 1.5 cups Heavy cream
  • 1 cup Cooked lobster meat, chopped
  • 1 cup Cooked shrimp, chopped
  • 1 cup Cooked crab meat, chopped
  • 2 tablespoons Cognac or brandy (optional)
  • 1 leaf Bay leaf
  • 1 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, melt the butter with the olive oil over medium heat.

Step 2

Add the carrots, celery, and onion to the pot. Sauté for 5-7 minutes until softened and fragrant.

Step 3

Stir in the garlic and cook for another minute, being careful not to burn it.

Add the tomato paste to the vegetables and cook for 2 minutes, stirring frequently, until it darkens slightly.

Sprinkle in the flour and stir constantly for 1-2 minutes to cook out the raw flour taste.

Bring the mixture to a gentle boil, then reduce the heat to low and simmer uncovered for 20-25 minutes. Stir occasionally.

Remove the bay leaf and carefully blend the soup with an immersion blender until smooth. If using a regular blender, blend in batches and return to the pot.

Taste and adjust seasoning with additional salt or pepper if needed.
