Ingredients

  • 3 medium Zucchini
  • 3 cups Cooked white rice
  • 2 cups Cheddar cheese
  • 0.5 cups Parmesan cheese
  • 2 large Eggs
  • 0.5 cups Milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.5 cups Breadcrumbs (optional for topping)
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or non-stick spray.

Step 2

Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much liquid as possible to prevent the dish from becoming too watery.

Step 3

In a large mixing bowl, combine the cooked white rice, grated zucchini, 1.5 cups of shredded cheddar cheese, and Parmesan cheese.

Step 4

In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well-blended.

Step 5

Pour the egg mixture over the rice and zucchini mixture, and stir until everything is evenly combined.

Step 6

Transfer the mixture to the prepared baking dish, spreading it out evenly.

Step 7

Sprinkle the remaining 0.5 cup of cheddar cheese over the top. If using breadcrumbs, sprinkle them evenly over the cheese layer for added crunch.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the casserole is set.

Step 9

Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley, if desired, before serving.

Step 10

Serve warm as a side dish or a satisfying meal on its own. Enjoy!
