Ingredients

  • 4 medium-sized zucchini
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 small tomato, diced
  • 0.5 cup crumbled bread crumbs
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Wash the zucchinis and slice them lengthwise. Using a spoon, scoop out the seeds and some of the flesh to create shallow cavities, being careful not to puncture the bottom or sides.
