  • 16 oz Velveeta cheese
  • 1 lb Ground breakfast sausage
  • 12 oz Rotini pasta
  • 10 oz Diced tomatoes with green chilies
  • 1 cup Milk
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 2 tbsp Butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Shredded cheddar cheese
  • 2 tbsp Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked, breaking it into small crumbles with a spatula. Transfer to a plate lined with paper towels to drain excess grease.

Chop the onion and mince the garlic. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the onion and sauté for about 3-4 minutes until softened. Add the garlic and cook for another 30 seconds until fragrant.
