Ingredients

  • 1 lb beef tenderloin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Pat the beef tenderloin dry with paper towels and cut it into thin, bite-sized strips.

Step 2

Season the tenderloin strips with salt and black pepper evenly on all sides.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the tenderloin strips and sear for 2-3 minutes per side until browned but still tender. Remove from the pan and set aside.

Step 4

In the same skillet, lower the heat to medium and melt the butter. Sprinkle the flour over the melted butter and whisk continuously to create a roux. Cook for 1-2 minutes until the mixture turns golden and smells nutty.

Step 5

Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the mixture thickens slightly, about 3-4 minutes.

Step 6

Reduce the heat to low and stir in the shredded cheddar cheese and grated Parmesan cheese. Mix until the cheeses are fully melted and the sauce is smooth.

Step 7

Season the cheese sauce with garlic powder and onion powder. Taste and adjust seasoning if necessary.

Step 8

Return the seared tenderloin strips to the skillet with the cheese sauce. Stir until the beef is fully coated and heated through, about 2-3 minutes.

Step 9

Garnish with fresh parsley and serve immediately. Enjoy your Cheesy Tenderloin Strips with your choice of side, such as mashed potatoes, steamed vegetables, or crusty bread.
