Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly, leaving the skins on. Slice them lengthwise into thin planks, about 1/8-inch thick.
Brush both sides of the potato slices with 2 tablespoons of olive oil and lay them on a baking sheet lined with parchment paper. Roast in the oven for 10 minutes, flipping halfway through, until they are soft and pliable but not fully cooked. Set aside to cool slightly.
While the potatoes are roasting, trim any excess fat from the flank steak and cut it into thin, long strips approximately the width of the potato planks.
Lay a cooled potato plank flat on a clean surface. Place a strip of steak on top, followed by a small pinch of chopped sundried tomatoes and a sprinkle of shredded mozzarella cheese.
