Ingredients

  • 6 cups (sliced) yellow squash
  • 1 cup (diced) onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 2 cups (shredded) sharp cheddar cheese
  • 0.5 cup (grated) parmesan cheese
  • 0.5 cup sour cream
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

In a large skillet, melt the butter over medium heat. Add the sliced yellow squash and diced onion, and cook for 8-10 minutes until softened. Set aside to cool slightly.

In a large mixing bowl, whisk together the eggs, sour cream, salt, and black pepper. Stir in the sharp cheddar cheese and Parmesan cheese.
