Ingredients

  • 500 g fresh spinach leaves
  • 2 tbsp olive oil
  • 1 medium, finely chopped onion
  • 2 minced garlic cloves
  • 250 g ricotta cheese
  • 100 g grated Parmesan cheese
  • 150 g grated mozzarella cheese
  • 1 beaten large egg
  • 0.5 tsp nutmeg
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp, for greasing butter

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Grease a baking dish with butter and set aside.

Step 3

Heat olive oil in a large skillet over medium heat.

Step 4

Add the chopped onion and sauté for about 3-4 minutes until translucent.

Step 5

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the fresh spinach leaves to the skillet in batches, stirring until all leaves are wilted and combined with the onion and garlic, about 5 minutes. Remove from heat and let cool slightly.

In a large mixing bowl, combine ricotta, half of the grated Parmesan, half of the grated mozzarella, beaten egg, nutmeg, salt, and black pepper. Mix until well combined.
