Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 pieces garlic cloves
  • 1 cup long-grain white rice
  • 15 ounces canned black beans
  • 14.5 ounces diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1.5 cups shredded cheddar cheese
  • 0.25 cup fresh cilantro
  • 1 piece lime

Directions

Step 1

Slice the chicken breasts into bite-sized pieces and season with a pinch of salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
