Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)

  • 0.25 tsp black pepper
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 0.25 cup fresh cilantro (chopped)
  • 2 tbsp butter
  • 0.5 cup sour cream (for serving)
  • 0.5 cup salsa (for serving)

Directions

Step 1

Rinse the shrimp under cold water and pat dry with paper towels. Cut the shrimp into bite-sized pieces if needed.

Step 2

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the shrimp to the skillet. Sprinkle with chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

Wipe the skillet clean with a paper towel. Place it back on medium heat.
