  • 1 pound shrimp (peeled and deveined)
  • 1 cup stone-ground grits

  • 2 cups sharp cheddar cheese (shredded)

  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 2 stalks green onions (sliced)
  • 2 large eggs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.

Step 2

In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the grits and reduce the heat to low. Cover and simmer for about 20 minutes, stirring occasionally to prevent sticking, until the grits are tender.

As the grits cook, heat olive oil in a large skillet over medium heat. Add the shrimp, garlic, smoked paprika, and cayenne pepper. Cook for 3–4 minutes until the shrimp are pink and opaque. Remove from heat and set aside.
