Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage, casing removed
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1.5 cups arborio rice
  • 0.5 cup dry white wine
  • 4 cups chicken stock, warmed
  • 0.75 cup Parmesan cheese, grated
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the Italian sausage and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes. Remove the cooked sausage with a slotted spoon and set aside.

Step 3

In the same pan, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 additional minute, until fragrant.

Add the arborio rice to the pan and stir to coat the grains in the oil. Toast the rice for 2 minutes, stirring constantly.

Pour in the white wine and cook until mostly absorbed, stirring frequently.

Begin adding the warmed chicken stock, one ladle (about 1/2 cup) at a time, stirring frequently and allowing the liquid to be absorbed before adding the next ladle. Continue this process until the rice is creamy and tender, about 20-25 minutes. You may not need all of the chicken stock.

Step 7

Once the rice is cooked, lower the heat and stir in the cooked sausage, grated Parmesan cheese, shredded mozzarella cheese, and butter. Mix well until the cheeses are melted and the risotto is creamy.

Step 8

Season with salt and black pepper to taste. Adjust seasoning as needed.

Step 9

Serve immediately, garnished with fresh parsley if desired.
