Preheat your oven to 200°C (400°F).
Clean the field mushrooms by gently wiping them with a damp paper towel. Remove the stems if desired.
Place the mushrooms gill-side up on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and sprinkle with fresh thyme if using. Roast in the preheated oven for 15–20 minutes or until tender.
While the mushrooms roast, prepare the sausage mixture by combining the ground sausage, shredded cheddar cheese, breadcrumbs, minced garlic, egg, parsley, salt, and black pepper in a mixing bowl.
Mix the ingredients thoroughly until well combined. Form the mixture into 4 evenly-sized patties, each about 2 cm thick.
Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat. Once hot, add the sausage cakes and cook for 4–5 minutes per side, or until golden brown and fully cooked through. The internal temperature should reach 74°C (165°F).
Once the mushrooms are done roasting, remove them from the oven and keep them warm.
To assemble, place each roasted field mushroom gill-side up on a plate. Top each mushroom with a cooked sausage cake.
