Ingredients

  • 2 cups Corn kernels (fresh, frozen, or canned)
  • 2 Red bell peppers
  • 1 cup Black beans (cooked and drained)
  • 8 ounces Cream cheese (softened)
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 cup Sour cream
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Green onions (thinly sliced, for garnish)
  • 2 tablespoons Fresh cilantro (chopped, optional)
  • 1 bag Tortilla chips (for serving)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw and pat dry. If using canned corn, drain and pat dry.

Toss the corn with 1 tablespoon of olive oil, 1/4 teaspoon of smoked paprika, and a pinch of salt. Spread the corn on a baking sheet lined with parchment paper.

Roast the corn in the oven for 15 minutes, stirring halfway through, until it is slightly charred and golden.
