Ingredients

  • 1 cup (uncooked) quinoa
  • 2 cups water
  • 2 cups (finely chopped) broccoli florets
  • 1 cup shredded cheddar cheese
  • 0.5 cup (grated) parmesan cheese
  • 0.5 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil

Directions

Step 1

Rinse the quinoa under cold water using a fine mesh strainer. Combine the quinoa and water in a medium saucepan, bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the quinoa is fully cooked and the water is absorbed. Let it cool to room temperature.

Step 2

Meanwhile, steam or blanch the broccoli florets until tender. Chop them finely and set them aside to cool.
