Ingredients

  • 4 medium Yellow potatoes
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 small Onion
  • 3 cloves Garlic
  • 2 tablespoons Taco seasoning
  • 1 15-ounce can Diced tomatoes with green chilies
  • 2 cups Shredded Mexican blend cheese
  • 1 cup Sour cream
  • 3 stalks Green onions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Cilantro (optional garnish)

Directions

Step 1

Wash and dice the yellow potatoes into bite-sized cubes. No need to peel unless desired.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden and crispy on the outside and tender on the inside. Remove the potatoes from the skillet and set aside on a plate.

Step 3

In the same skillet, add the ground beef and cook over medium heat, breaking it up with a spatula, until browned and fully cooked, about 6-8 minutes. Drain any excess grease if needed.

Step 4

Finely dice the small onion and mince the garlic cloves. Add them to the skillet with the cooked ground beef and sauté for 2-3 minutes until fragrant and the onion is slightly softened.
