Ingredients

  • 4 medium Russet potatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup All-purpose flour
  • 1 large Egg
  • 1 cup shredded Cheddar cheese
  • 2 stalks finely chopped Green onion
  • 0.5 teaspoon Garlic powder
  • 0.25 cup Vegetable oil
  • 0.5 cup Sour cream

Directions

Step 1

Peel the potatoes and grate them using a coarse grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

Step 2

In a large mixing bowl, combine the grated potatoes, salt, black pepper, flour, egg, shredded cheddar cheese, chopped green onion, and garlic powder. Mix well until evenly combined.

Step 3

Heat a large skillet over medium heat and add vegetable oil. Once the oil is hot, scoop about 2 tablespoons of the potato mixture into the skillet for each pancake and flatten gently with a spatula to form a round, even shape.

Step 4

Cook the pancakes for 3–4 minutes on each side, or until golden brown and crispy. Work in batches, adding more oil to the pan if necessary.

Step 5

Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil.

Step 6

Serve the cheesy potato pancakes warm with a dollop of sour cream on top. Garnish with additional green onions if desired.
