Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2.5 cups Whole milk
  • 2 cups Sharp cheddar cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Garlic powder
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)
  • 1 tablespoon Olive oil or non-stick spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or non-stick spray.

Step 2

Peel the potatoes and slice them into thin, even rounds about 1/8-inch thick. Use a mandoline slicer for uniform slices, if available. Set the sliced potatoes aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to remove the raw flour taste.

Step 4

Slowly pour in the milk, whisking continuously to avoid lumps. Cook the mixture for 4-5 minutes, or until it thickens and coats the back of a spoon.

Step 5

Remove the saucepan from heat and stir in 1.5 cups of shredded cheddar cheese, all the Parmesan cheese, Dijon mustard, garlic powder, salt, and black pepper. Mix until the cheese is fully melted and the sauce is smooth.

Step 6

Spread a thin layer of the cheese sauce on the bottom of the prepared baking dish. Arrange one-third of the potato slices in an even layer over the sauce.

Step 7

Pour a third of the remaining cheese sauce over the potato layer, spreading it evenly. Repeat the layering process two more times, finishing with a layer of cheese sauce on top.

Step 8

Sprinkle the remaining 0.5 cups of shredded cheddar cheese over the top layer for a golden crust.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 50 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden and bubbling and the potatoes are fork-tender.

Step 10

Remove the potato bake from the oven and let it rest for 10 minutes before serving. Garnish with freshly chopped parsley, if desired.

Step 11

Serve warm and enjoy your cheesy, comforting potato bake!
