Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.
Peel and thinly slice the potatoes into even circles about 1/8-inch thick. Set them aside in a bowl of water to prevent browning.
Season the pork chops on both sides with 1 teaspoon of salt, 1/2 teaspoon of black pepper, paprika, and garlic powder.
Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
In the same skillet, reduce the heat to medium and melt the butter. Whisk in the flour to create a roux and cook for 1 minute while whisking constantly.
Slowly pour in the heavy cream and milk, whisking continuously to avoid lumps. Cook until the sauce thickens, about 3-4 minutes.
Stir in 1.5 cups of shredded cheddar cheese until melted and smooth. Season the sauce with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Remove the skillet from the heat.
Drain the potato slices and layer half of them in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading it evenly. Repeat with the remaining potatoes and sauce.
Arrange the seared pork chops on top of the potato layers. Cover the dish with aluminum foil.
Bake in the preheated oven for 35 minutes. Then, remove the foil, sprinkle the remaining 0.5 cups of cheddar cheese over the top, and bake uncovered for an additional 15 minutes until the cheese is melted and bubbly.
Let the dish rest for 5 minutes before serving. Garnish with chopped parsley if desired. Enjoy!
