Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 cup pepperoni slices, chopped
  • 1 pound Italian sausage, cooked and crumbled
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 loaf French baguette or Italian bread, sliced
  • 2 tablespoons butter, softened
  • 0.5 teaspoon garlic powder
  • 2 tablespoons chopped fresh basil (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until softened.

Step 4

Add the chopped pepperoni and cooked Italian sausage, stirring to combine.

Step 5

Pour in the crushed tomatoes and chicken broth. Stir well.

Season the soup with oregano, basil, crushed red pepper flakes, salt, and black pepper. Bring it to a simmer and let it cook for 20 minutes, stirring occasionally.

Step 7

Reduce the heat to low and stir in the shredded mozzarella cheese, Parmesan cheese, and heavy cream until the cheese is melted and the soup is creamy.

Step 8

While the soup simmers, prepare the garlic bread. Preheat the oven to 375°F (190°C).

Step 9

Spread softened butter onto the slices of bread and sprinkle with garlic powder.

Step 10

Place the bread slices on a baking sheet and bake for 8-10 minutes, or until golden and crispy.
