Ingredients

  • 1 cup All-purpose flour
  • 1 cup Sharp cheddar cheese, shredded
  • 0.25 cup Parmesan cheese, finely grated
  • 6 tablespoons Unsalted butter, cold and cubed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Cayenne pepper (optional, for a slight kick)
  • 2 tablespoons Ice water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a food processor, combine the all-purpose flour, sharp cheddar cheese, Parmesan cheese, salt, and cayenne pepper (if using). Pulse a few times until the mixture is evenly combined.

Step 3

Add the cold, cubed butter to the food processor. Pulse until the mixture resembles coarse crumbs.

Step 4

Gradually add the ice water, one tablespoon at a time, while pulsing. Stop once the dough begins to come together but isn’t too sticky.

Step 5

Remove the dough from the processor and shape it into a disk. Wrap it in plastic wrap and refrigerate for about 15 minutes to firm up slightly.

Step 6

Once chilled, roll out the dough on a lightly floured surface to about 1/8-inch thickness.

Step 7

Use a small round cookie cutter (about 1 inch in diameter) to cut out wafer-sized circles, resembling pennies.

Step 8

Place the circles on the prepared baking sheets, leaving about 1/2-inch space between them.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges just start to brown and the wafers are crisp.

Step 10

Allow the wafers to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve immediately or store in an airtight container for up to 3 days.
