Ingredients

  • 350 g spaghetti
  • 2 tbsp olive oil
  • 2 pieces boneless, skinless chicken breasts

  • 0.5 tsp black pepper
  • 3 pieces garlic cloves (minced)
  • 250 g white button mushrooms (sliced)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the chicken to the skillet and cook for 5-6 minutes per side, or until golden brown and fully cooked. Remove from the pan and set aside to rest. Once cool, slice the chicken into thin strips.
