Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 1 pound ground beef (or ground turkey or black beans for vegetarian)
  • 1 cup long-grain white rice
  • 1 cup tomato sauce
  • 2 cups chicken or vegetable broth
  • 1 cup frozen corn
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and bell peppers. Sauté for 3-4 minutes until the vegetables soften.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the ground beef (or turkey, or black beans if making vegetarian) to the skillet. Cook until the meat is browned and crumbled, about 5-7 minutes. Drain any excess fat if necessary.

Step 5

Stir in the rice, tomato sauce, broth, taco seasoning, and corn. Mix well, making sure the rice is fully submerged in the liquid.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 18-20 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.

Step 7

Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top.

Step 8

Cover again and let the cheese melt for 2-3 minutes.

Step 9

Optionally, garnish with chopped cilantro and serve with a dollop of sour cream on the side.

Step 10

Enjoy your Cheesy Mexican Rice Skillet!
