  • 4 large russet potatoes
  • 3 tablespoons unsalted butter
  • 1 medium, diced yellow onion

  • 4 cups chicken broth
  • 2 cups whole milk
  • 0.5 cups heavy cream
  • 2 cups, diced cooked ham
  • 2 cups, shredded sharp cheddar cheese
  • 2 stalks, sliced for garnish green onions
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons paprika

Directions

Step 1

Peel and cube the russet potatoes into uniform pieces. Place the potatoes in a large pot of salted water and bring to a boil over medium-high heat. Cook until fork-tender, about 10-12 minutes. Drain and set aside.

Step 2

In a large soup pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
