Ingredients

  • 4 medium Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1 cup Whole milk
  • 1 cup Sour cream
  • 2 cups Shredded sharp cheddar cheese
  • 1 cup Cooked bacon
  • 4 stalks Scallions (green onions)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Parmesan cheese (optional)
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a medium-sized casserole dish with nonstick cooking spray and set it aside.

Step 2

Peel the potatoes and cut them into large chunks. Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil over medium-high heat. Cook the potatoes until fork-tender, about 15-20 minutes.

While the potatoes are cooking, chop the cooked bacon into small pieces and thinly slice the scallions. Set them aside.
