  • 2 cloves (minced) Garlic
  • 4 cups (lightly packed) Fresh spinach
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Ground cumin
  • 2 tablespoons (chopped, optional for garnish) Fresh parsley

Directions

Step 1

Peel the potatoes and cut them into 1/2-inch cubes.

Step 2

Place the potato cubes in a large pot, cover with water, and bring to a boil. Cook for 5-7 minutes until the potatoes are fork-tender but not falling apart. Drain and set aside.

Step 3

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat.
