Ingredients

  • 16 oz Frozen hash browns
  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 14.5 oz (1 can) Diced tomatoes
  • 2 tbsp Tomato paste
  • 15 oz (1 can) Kidney beans, drained and rinsed
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Cheddar cheese, shredded
  • 2 tbsp Green onions, sliced (optional)
  • 0.5 cup Sour cream (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Stir in the diced tomatoes (with their juice), tomato paste, kidney beans, chili powder, ground cumin, smoked paprika, salt, and black pepper. Reduce the heat to medium-low and let the chili simmer for 10-12 minutes, stirring occasionally.

Step 5

Meanwhile, in a non-stick or lightly greased ovenproof baking dish (9x13 inch recommended), spread the frozen hash browns evenly. Bake in the preheated oven for 15-20 minutes until golden and slightly crispy.

Step 6

Remove the baking dish from the oven and carefully layer the prepared chili evenly over the baked hash browns.

Step 7

Sprinkle the shredded cheddar cheese generously over the top of the chili layer.

Step 8

Return the baking dish to the oven and bake for another 10-12 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let rest for 5 minutes before serving. Optionally, garnish with sliced green onions and a dollop of sour cream.
