  • 8 pieces flour tortillas (8-10 inches)
  • 3 cups shredded cheddar cheese
  • 2 cups enchilada sauce
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
