Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 piece Red bell pepper
  • 1 piece Green bell pepper
  • 1 piece Yellow onion
  • 2 tablespoons Fajita seasoning
  • 4 pieces Large flour tortillas
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0 optional Sour cream (optional, for serving)
  • 0 optional Salsa (optional, for serving)

Directions

Step 1

Slice the chicken breasts into thin strips and season them with fajita seasoning, 1 tablespoon of olive oil, salt, and black pepper. Set aside.

Step 2

Heat a large skillet over medium heat and add the remaining 1 tablespoon of olive oil. Add the chicken strips and cook for 6-8 minutes, stirring occasionally, until fully cooked. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the sliced red bell pepper, green bell pepper, and yellow onion. Sauté the vegetables for 5-6 minutes until they are tender and slightly caramelized. Remove the vegetables from the skillet and set aside.

Step 4

In a clean skillet, melt 1/2 tablespoon of butter over medium heat. Place one tortilla in the skillet.

Sprinkle a layer of shredded cheddar cheese and Monterey Jack cheese over half of the tortilla. Add a portion of the cooked chicken and sautéed vegetables on top of the cheese.

Repeat the process with the remaining tortillas, adding more butter to the skillet as needed.
