  • 3 cups Shredded Mexican blend cheese
  • 8 pieces Flour tortillas
  • 2 cups Enchilada sauce
  • 4 ounces Cream cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with vegetable oil or nonstick cooking spray.

Step 2

In a large skillet over medium heat, add the vegetable oil and heat until shimmering. Add the shredded cooked chicken, cream cheese, cumin, paprika, garlic powder, salt, and black pepper. Stir until the cream cheese has melted and evenly coats the chicken. Remove from heat and let the mixture cool slightly.
