Ingredients

  • 2 cups Cooked shredded chicken
  • 1.5 cups Shredded cheddar cheese
  • 4 oz Cream cheese, softened
  • 0.25 cup Chopped green onions
  • 1 tsp Garlic powder
  • 0.5 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 10 pieces Empanada dough discs (store-bought or homemade)
  • 1 large Egg
  • 1 tbsp Water
  • 2 cups Vegetable oil (for frying, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) if you plan to bake the empanadas, or prepare oil for frying by heating it in a large, deep skillet over medium heat.

Step 2

In a large mixing bowl, combine the shredded chicken, cheddar cheese, softened cream cheese, green onions, garlic powder, cumin, salt, and black pepper. Mix until well-combined.

Step 3

Lay the empanada dough discs on a clean working surface. Place about 2 tablespoons of the chicken-cheese mixture in the center of each disc.

Step 4

Fold the dough over the filling to form a half-moon shape, then press the edges together to seal. Use a fork to crimp the edges for an extra-tight seal and decorative finish.

Step 5

In a small bowl, beat the egg with 1 tablespoon of water to create an egg wash. Brush the egg wash lightly over the tops of the empanadas.

Step 6

To bake: Place the empanadas on a parchment-lined baking sheet and bake for 18-22 minutes, or until the dough is golden brown and cooked through.

Step 7

To fry: Carefully place the empanadas into the hot oil, a few at a time, and fry for 2-3 minutes per side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Step 8

Serve the empanadas warm with your favorite dipping sauce, such as salsa, guacamole, or sour cream.
