Ingredients

  • 1 head (about 2 pounds) cauliflower
  • 3 tablespoons unsalted butter
  • 1 medium (finely chopped) yellow onion
  • 2 cloves (minced) garlic
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup whole milk
  • 2 cups (shredded) sharp cheddar cheese
  • 1 cup (grated) Parmesan cheese
  • 0.5 teaspoon (or to taste) salt
  • 0.25 teaspoon (or to taste) black pepper
  • 0.25 teaspoon paprika
  • 2 tablespoons (sliced, for garnish) green onions

Directions

Step 1

Wash the cauliflower, remove the leaves and tough stem, and cut it into florets.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Sprinkle the flour over the onion and garlic mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste.
