Ingredients

  • 3 cups cauliflower florets
  • 1 cup shredded cheddar cheese

Directions

Step 1

Bring a pot of water to a boil and blanch the cauliflower florets for 4-5 minutes until tender. Drain well and pat them dry to remove excess moisture.

Step 2

Using a food processor, pulse the cauliflower until finely chopped and resembles rice. Transfer it to a large bowl.

Step 3

Add shredded cheddar cheese, parmesan cheese, flour, eggs, green onions, garlic powder, salt, and pepper to the bowl. Mix well until fully combined and a thick batter-like consistency forms.

Heat 1 tablespoon of olive oil in a large skillet over medium heat.
