Ingredients

  • 2 cups Cooked turkey (shredded or diced)
  • 1 cup White rice (uncooked)
  • 3 cups Broccoli florets (fresh or frozen)
  • 2 cups Cheddar cheese (shredded)
  • 1.5 cups Milk
  • 2 cups Chicken or turkey broth
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a medium saucepan, combine the uncooked rice and chicken (or turkey) broth. Bring it to a boil, reduce to a simmer, cover, and cook for about 15 minutes or until the rice is tender. Set aside.

Step 3

If using fresh broccoli, bring a pot of water to a boil and blanch the broccoli florets for 2-3 minutes, then drain and set aside. If using frozen broccoli, thaw it and pat dry.

Step 4

In a large skillet over medium heat, add the olive oil. Once hot, add the shredded or diced turkey. Cook for 2-3 minutes just to warm through, then remove from heat and set aside.

Step 5

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour, stirring continuously to form a roux. Cook for 1 minute to remove the raw flour taste.

Step 6

Gradually whisk in the milk, stirring constantly to avoid lumps. Cook for 2-3 minutes or until the mixture thickens slightly.

Step 7

Stir in 1 1/2 cups of shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Continue stirring until the cheese has melted and the sauce is smooth. Remove from heat.

Step 8

In a large mixing bowl, combine the cooked rice, turkey, broccoli, and cheese sauce. Mix until everything is evenly coated.

Step 9

Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese has melted and the casserole is golden and bubbly.

Step 11

Remove from the oven and let it rest for 5 minutes before serving. Enjoy!
