Ingredients

  • 6 eggs
  • 0.25 cup whole milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter
  • 6 slices bacon
  • 1 medium-sized, diced red bell pepper
  • 0.5 medium-sized, diced yellow onion
  • 2 cups baby spinach
  • 2 stalks, thinly sliced green onions

Directions

Step 1

In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set the bowl aside.

Step 2

Heat a large non-stick skillet over medium heat, then add the bacon slices. Cook for 5–7 minutes, flipping occasionally, until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate. Once cooled, crumble the bacon into small pieces and set aside.

Step 3

Discard excess bacon grease from the skillet, leaving about 1 tablespoon in the pan. Add the diced red bell pepper and onion to the skillet, and sauté for 3–4 minutes until softened.

Step 4

Add the baby spinach to the skillet and cook for an additional 1–2 minutes, stirring frequently, until wilted. Transfer the sautéed vegetables to a bowl and set aside.

Step 5

Add the unsalted butter to the skillet and allow it to melt over medium-low heat. Pour in the egg mixture and let it cook undisturbed for about 1 minute until it starts to set on the bottom.

Step 6

Using a spatula, gently stir and fold the eggs, cooking them for another 2–3 minutes until they are soft and scrambled to your desired consistency.

Step 7

Reduce the heat to low and sprinkle the shredded cheddar cheese evenly over the scrambled eggs. Add the crumbled bacon and sautéed vegetables on top, gently folding them into the eggs.

Step 8

Cook for an additional 1–2 minutes to allow the cheese to melt and everything to warm through.

Step 9

Remove the skillet from the heat and garnish the dish with thinly sliced green onions.

Step 10

Serve immediately while warm and enjoy your Cheesy Breakfast Brunch!
