Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups enchilada sauce
  • 8 pieces flour tortillas (8–10 inches)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 tablespoon cooking oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the cooking oil in a large skillet over medium heat.

Step 3

Add the diced onion and cook for 3–4 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 5

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 6–8 minutes.

Step 6

Drain any excess grease from the skillet and return it to the stovetop.

Step 7

Stir in the black beans, chili powder, cumin, salt, and black pepper. Mix well to evenly coat the beef and beans in the spices. Set the mixture aside.

Step 8

Spread 1/2 cup of enchilada sauce over the bottom of a 9x13-inch baking dish.

Step 9

Lay a tortilla flat on a clean surface. Spoon 1/4 cup of the beef and bean mixture down the center. Sprinkle 2 tablespoons of cheddar cheese on top of the filling.

Step 10

Roll the tortilla tightly around the filling and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Step 11

Pour the remaining enchilada sauce evenly over the rolled tortillas in the dish, ensuring all are well coated.

Step 12

Sprinkle the remaining cheddar cheese and the Monterey Jack cheese evenly over the top.

Step 13

Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.

Step 14

Remove from the oven and let cool for 5 minutes.

Step 15

Garnish with fresh cilantro if desired and serve warm.
