Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 15 ounce can black beans, drained and rinsed
  • 15 ounce can pinto beans, drained and rinsed
  • 14.5 ounce can diced tomatoes, with juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 2 cups corn tortilla chips, lightly crushed
  • 0 sour cream (optional, for serving)
  • 0 chopped cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess grease if necessary.

Step 3

Add the diced onion to the skillet and sauté for 3-4 minutes, until softened. Add minced garlic and cook for an additional 1 minute.

Step 4

Stir in the black beans, pinto beans, and diced tomatoes with juice. Add chili powder, cumin, paprika, salt, and black pepper. Mix well and let simmer for 5 minutes to let the flavors meld.

Step 5

In a 9x13-inch baking dish, spread half of the beef and bean mixture evenly across the bottom.

Step 6

Sprinkle 1 cup of cheddar cheese and 1/2 cup of monterey jack cheese over the layer.

Step 7

Add a layer of crushed tortilla chips, using about 1 cup.

Step 8

Repeat the layering process with the remaining beef and bean mixture, another layer of 1 cup cheddar cheese, 1/2 cup monterey jack cheese, and 1 cup tortilla chips on top.

Step 9

Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Step 11

Remove from the oven and let the casserole cool for 5 minutes before serving.

Step 12

Optional: Serve with a dollop of sour cream and a sprinkle of chopped cilantro for added flavor.
