Ingredients

  • 1 large zucchini
  • 1 large sweet potato
  • 2 large egg
  • 0.5 cup all-purpose flour
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 2 stalks green onion, finely chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon olive oil or nonstick spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the paper with olive oil or a nonstick spray.

Step 2

Peel the sweet potato and grate it using a box grater. Place the grated sweet potato in a large mixing bowl.

Step 3

Wash and grate the zucchini using the same box grater. After grating, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as you can, then add the squeezed zucchini to the bowl with the sweet potato.

Add the eggs, all-purpose flour, grated Parmesan cheese, and shredded mozzarella cheese to the bowl.
