Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the paper with olive oil or a nonstick spray.
Peel the sweet potato and grate it using a box grater. Place the grated sweet potato in a large mixing bowl.
Wash and grate the zucchini using the same box grater. After grating, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as you can, then add the squeezed zucchini to the bowl with the sweet potato.
Add the eggs, all-purpose flour, grated Parmesan cheese, and shredded mozzarella cheese to the bowl.
Mix in the chopped green onion, garlic powder, paprika, salt, and black pepper until everything is well combined.
Scoop out approximately 2 tablespoons of the mixture and shape it into a small patty. Place each patty onto the prepared baking sheet. Repeat with the remaining mixture, spacing the patties about 1 inch apart.
Bake the patties in the preheated oven for 12–15 minutes, then carefully flip them over and bake for an additional 10 minutes, or until the patties are golden brown and firm to the touch.
