Ingredients

  • 500 g Cheese-filled tortellini
  • 300 g Salmon fillet (skinless)
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 2 cups Whole milk
  • 0.5 cup Heavy cream
  • 2 cloves Garlic (minced)
  • 1 cup Parmesan cheese (grated)
  • 1 cup Mozzarella cheese (shredded)
  • 2 cups Fresh spinach (optional)
  • 2 tbsp Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Bring a large pot of salted water to a boil, and cook the cheese-filled tortellini according to the package instructions. Drain and set aside.

Meanwhile, heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.

Step 4

Season the salmon fillet with a pinch of salt and black pepper, then cook it in the skillet for 3-4 minutes on each side until it is fully cooked through and flakes easily. Remove from the skillet and flake the salmon into bite-sized pieces. Set aside.

In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Once melted, whisk in the 2 tablespoons of flour and cook for 1-2 minutes until the mixture is golden.

Gradually add the milk and heavy cream, whisking continuously to prevent lumps. Simmer for 3-4 minutes until the sauce thickens.

Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining shredded mozzarella on top.

Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
