  • 900 grams fresh green beans, trimmed
  • 200 grams bacon, diced
  • 4 tablespoons unsalted butter
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 480 milliliters milk
  • 120 milliliters chicken or vegetable broth
  • 200 grams shredded cheddar cheese
  • 50 grams grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams crispy fried onions
  • 50 grams panko breadcrumbs

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Bring a large pot of salted water to a boil. Add the trimmed green beans and blanch them for 5 minutes. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.

Step 3

In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate. Leave about 2 tablespoons of the bacon fat in the skillet.

Add the unsalted butter to the skillet with the bacon fat and melt over medium heat. Stir in the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for 1 more minute.
