Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the potatoes thoroughly and cut them into 1-inch cubes, leaving the skin on.

Toss the potato cubes in a large bowl with olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.
