Ingredients

  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 6 slices bacon strips
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 4 tablespoons unsalted butter
  • 2 tablespoons chopped green onions

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Scrub the potatoes clean under running water and pat them dry with a clean kitchen towel. Using a fork, poke several holes into each potato to allow steam to escape during baking.

Step 3

Rub the potatoes all over with olive oil, then sprinkle with salt and pepper. Place them on the prepared baking sheet.

Step 4

Bake the potatoes in the preheated oven for 60 minutes, or until they are tender when pierced with a fork.

Step 5

While the potatoes are baking, cook the bacon slices in a skillet over medium heat until they are crispy. Remove the bacon from the skillet, let it cool on a plate lined with paper towels, and then crumble it into small pieces.

Step 6

Once the potatoes are done baking, remove them from the oven and let them cool for about 5 minutes. Cut a lengthwise slit on the top of each potato and gently push the ends together to open them slightly.

Step 7

Carefully scoop out the insides of the potatoes into a mixing bowl, leaving about 1/4 inch of potato flesh inside the skins to maintain their shape.

Step 8

Add the butter, sour cream, and half the shredded cheddar cheese to the potato insides. Mash everything together until the mixture is smooth and creamy. Season with additional salt and pepper to taste, if necessary.

Step 9

Spoon the mashed potato mixture back into the potato skins, dividing it evenly among the four potatoes. Place them back on the baking sheet.

Step 10

Top each stuffed potato with the remaining cheddar cheese and the crumbled bacon.

Step 11

Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 12

Remove the potatoes from the oven and top with chopped green onions. Serve immediately and enjoy your cheesy bacon baked potatoes!
