Ingredients

  • 1 lb Ground chicken
  • 1 cup Artichoke hearts (canned, drained, and chopped)
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 0.75 cup Panko breadcrumbs
  • 2 cloves Garlic, minced
  • 1 large Egg
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a large mixing bowl, combine the ground chicken, chopped artichoke hearts, shredded mozzarella cheese, grated Parmesan cheese, panko breadcrumbs, minced garlic, egg, chopped parsley, salt, and black pepper.

Step 3

Using clean hands or a spoon, mix the ingredients until well incorporated but do not overmix, as this can make the meatballs dense.

Step 4

Scoop out about 2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture has been used, forming approximately 16-18 balls.

Step 5

Heat olive oil in a large skillet over medium heat. Sear the chicken balls for 1-2 minutes on each side, until golden-brown. This step adds extra flavor and helps them hold their shape.

Step 6

Transfer the seared chicken balls to the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the internal temperature reaches 165°F (74°C).

Step 7

Remove from the oven and let them cool slightly before serving. Garnish with additional parsley or Parmesan cheese, if desired.

Step 8

Serve the cheesy artichoke chicken balls as an appetizer with your favorite dipping sauce, or pair them with pasta or a fresh green salad for a complete meal.
