Ingredients

  • 1.5 cups Graham cracker crumbs
  • 6 tablespoons Unsalted butter, melted
  • 2 tablespoons Granulated sugar (for crust)
  • 16 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream, chilled
  • 1.5 cups Fresh fruit or pie filling (optional, for topping)

Directions

Step 1

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.

Step 2

Press the crumb mixture firmly into the bottom of a 9-inch springform pan or a pie dish to form the crust. Use the bottom of a measuring cup to press it down evenly. Chill in the refrigerator while preparing the filling.

Step 3

In a large mixing bowl, beat the softened cream cheese and powdered sugar together using a hand or stand mixer on medium speed until smooth and creamy, about 2-3 minutes.

Step 4

Add the vanilla extract and mix until combined.

Step 5

In a separate bowl, whip the heavy cream on high speed until stiff peaks form, about 3-4 minutes.

Step 6

Gently fold the whipped cream into the cream cheese mixture using a spatula. Be careful not to deflate the whipped cream while combining.

Step 7

Remove the crust from the refrigerator and spread the cream cheese mixture evenly over the crust. Smooth the top with a spatula.

Step 8

Chill the cheesecake in the refrigerator for at least 4 hours, or until set. For best results, let it chill overnight.

Step 9

When ready to serve, top the cheesecake with fresh fruit, pie filling, or simply serve it plain. Slice and enjoy!
