  • 0.75 cups unsalted butter, cold and cubed
  • 8 ounces cream cheese, softened
  • 0.75 cups granulated sugar
  • 2 items large eggs
  • 0.3 cups fresh lemon juice
  • 1 tablespoons lemon zest
  • 1 tablespoons all-purpose flour
  • 2 tablespoons powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium bowl, mix 1.5 cups of all-purpose flour and 0.5 cups of sugar. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Press the mixture firmly and evenly into the bottom of the prepared baking dish to form the crust. Bake for 18-20 minutes, or until the edges are lightly golden. Remove from the oven and set aside to cool slightly.
