Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a medium bowl, mix 1.5 cups of all-purpose flour and 0.5 cups of sugar. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Press the mixture firmly and evenly into the bottom of the prepared baking dish to form the crust. Bake for 18-20 minutes, or until the edges are lightly golden. Remove from the oven and set aside to cool slightly.
In a large mixing bowl, beat the softened cream cheese and 0.75 cups of sugar until smooth and creamy using a hand or stand mixer.

Pour the cheesecake batter over the slightly cooled crust, spreading it out evenly.
Bake in the preheated oven for 18-22 minutes, or until the center is set and no longer jiggly. Remove from the oven and allow the bars to cool in the pan at room temperature for 1 hour.
Once cool, refrigerate the bars for at least 2 hours to fully set. Use the parchment overhang to lift the bars out of the pan and cut them into 9 squares.
