Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Cajun seasoning
  • 4 tablespoons Olive oil
  • 12 ounces Bow-tie pasta (farfalle)
  • 1.5 cups Heavy cream
  • 2 tablespoons Unsalted butter
  • 1.5 cups Bell peppers (red, green, yellow), thinly sliced
  • 3 cloves Garlic, minced
  • 0.5 cup Parmesan cheese, grated (for sauce)
  • 2 tablespoons Parsley, chopped (garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.

Step 2

In a shallow dish, combine breadcrumbs, grated Parmesan cheese, salt, and black pepper.

Step 3

In another shallow dish, mix the flour with Cajun seasoning.

Step 4

In a third shallow dish, whisk eggs with 2 tablespoons of milk.

Step 5

Dredge each chicken breast in the flour mixture, then dip into the egg mixture, and finally coat with the breadcrumb mixture. Press gently to ensure the coating adheres.

Step 6

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Cook the chicken breasts for 4-5 minutes per side or until golden brown and cooked through. Remove and keep warm.

Step 7

Cook the bow-tie pasta in salted boiling water according to package instructions. Drain and set aside.

Step 8

In the same skillet, heat the remaining 2 tablespoons of olive oil and unsalted butter over medium heat. Sauté the thinly sliced bell peppers and minced garlic until softened, about 3-4 minutes.

Step 9

Stir in the heavy cream and bring to a gentle simmer. Add Cajun seasoning and grated Parmesan cheese. Stir until the cheese is melted and the sauce is slightly thickened, about 2-3 minutes.

Step 10

Add the cooked pasta to the skillet and toss to coat in the sauce. Adjust seasoning with salt and pepper if needed.

Step 11

To serve, plate the creamy pasta and top with a crispy chicken breast. Garnish with chopped parsley and additional grated Parmesan cheese, if desired.
