Ingredients

  • 1.25 cups All-purpose flour
  • 2 teaspoons Cornstarch
  • 0.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 4 ounces Cream cheese, softened
  • 0.75 cups Granulated sugar
  • 1 teaspoons Vanilla extract
  • 1 large Egg yolk
  • 0.25 cups Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Set aside.

Step 3

In a large bowl, beat the softened butter and cream cheese together using an electric mixer on medium speed until smooth and creamy, about 2 minutes.

Step 4

Add the granulated sugar to the butter-cream cheese mixture and beat until light and fluffy, about 2 minutes.

Step 5

Mix in the vanilla extract and egg yolk, beating well until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Step 7

Scoop tablespoon-sized portions of dough and roll them into balls with your hands. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops appear slightly puffed. Avoid overbaking, as the cookies should remain soft.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Step 10

Once cooled, dust the cookies with powdered sugar before serving.
