Ingredients

  • 4 large Russet potatoes
  • 1 pound Ground beef
  • 1 medium, diced Yellow onion
  • 1.5 cups, shredded Cheddar cheese
  • 3 tablespoons Ketchup
  • 1 tablespoon Yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Butter
  • 2 stalks, sliced Green onions
  • 0.5 cup Sour cream
  • 0.25 cup, diced (optional) Pickles

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry, then pierce each potato several times with a fork.

Step 3

Rub the potatoes with 1 tablespoon of melted butter and place them directly on the oven rack. Bake for 50-60 minutes until tender and the skin is crispy.

Step 4

While the potatoes are baking, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess grease.

Step 5

Add the diced onion to the skillet and cook for 3-4 minutes, until softened.

Step 6

Stir in the ketchup, mustard, Worcestershire sauce, salt, and black pepper. Reduce the heat to low and cook for another 2-3 minutes. Remove the skillet from heat and set aside.

Step 7

Once the potatoes are baked, remove them from the oven and let them cool slightly, about 5 minutes.

Step 8

Slice each potato lengthwise and carefully scoop out the insides into a large bowl, leaving about 1/4 inch of potato in the skin to maintain its structure.

Step 9

Mash the scooped-out potato with 1 tablespoon of butter, sour cream, and 1 cup of shredded cheddar cheese. Mix until smooth.

Step 10

Stir the seasoned beef mixture into the mashed potato mixture until evenly combined.

Step 11

Spoon the mixture back into the potato skins, mounding it slightly.

Step 12

Place the stuffed potatoes on a baking sheet and sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of each potato.

Step 13

Return the potatoes to the oven and bake for 10-12 minutes, or until the cheese on top is melted and bubbly.

Step 14

Garnish with sliced green onions and optional diced pickles before serving. Enjoy your Cheeseburger Stuffed Potatoes!
