  • 6 oz Cream cheese, softened and cubed
  • 2 cups Shredded cheddar cheese
  • 1 cup Heavy cream
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Tortilla chips, for serving
  • 0.25 cup Chopped fresh cilantro, for garnish

Directions

Step 1

In a large soup pot or Dutch oven, brown the ground beef over medium heat, breaking it apart with a spoon until fully cooked, about 5-7 minutes. Drain excess grease if needed.

Add the diced onion and red bell pepper to the pot. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
